Coals are the tool, flames are the by-product

Flame is theatre and soot. Coals are heat you can meter. Light your fire forty-five minutes before you want to cook, let it collapse, then rake the coals to one side and cook over the raked bed. When the bed dims, rake fresh coals across. That two-zone habit, a live fire feeding a cooking bed, is the whole secret of every hearth restaurant you have liked.

The woods are not interchangeable

Dense hardwood (we use birch) burns hot and long and makes the coal bed. A softwood like fir throws sparks and pitch and is wrong for coals, but a small piece added late gives a resinous smoke that suits fish and vegetables. Whatever you use, it must be seasoned a year. Green wood steams; it does not cook.

Salt, fat, rest

Fire is drier than an oven, so salt earlier and use more fat than feels polite: the drippings are not waste, they are the sauce. And rest everything twice as long as you would from a pan. A hanger steak off the coals is furious inside; give it ten minutes and it forgives you.

Last: cook outside in the shoulder seasons and the fire becomes the evening rather than a chore. That part we cannot teach; October on a lake does it for free.
